Happiness on Sunday is....


Chocolate chip banana bread for breakfast. Thank you to Audrey, my BYU friend, for the recipe. I personally put chocolate chips in, instead of nuts (inspiration to Helena....it's so good this way). A total Sunday morning treat.

1/3 cup shortening

¾ cup sugar

3 mashed bananas (dark peels)

2 eggs

½ cup sour milk (1/2 cup milk + 1 tsp. lemon juice)

1 tsp. soda

1 tsp. hot water

1 tsp. vanilla

½ tsp. salt

2 cups flour

½ cup nuts

Mix it all together.

Bake at 375 for 1 hour (check on it after 1/2 hour by inserting a toothpick and removing the bread when the toothpick comes out clean) -- with mini loaf pans the cooking time is much less. About 30 minutes.
