Being Healthy: Weeks 2 & 3

Things I have learned during the past two weeks

  • When I don't drink enough water I can't lose weight (week 2 I gained .6 lbs, WHAT?!)
  • Eating salad for lunch is basically the smartest way to save my points for other meals/snacks
  • Twizzlers are 1pt per twizzler.
  • I miss bread, I still eat a little, but I miss snacking away at bread
  • Rice, so not worth it. On WW, rice is 5pts per cup, I only get 30pts per day so that's a LOT of points
  • Zumba gets easier and less embarrasing with time
  • Attending the gym 5 days a week makes me feel like a rockstar. And I miss it on that one weekday I don't go.
  • Wearing new workout clothes makes me happy
  • I am getting really toned. The total lbs lost may be small but I feel and look a LOT better.
Boo on pictureless posts, here's Evie happily playing at the mall on the cars (no money was inserted and she was still happy.)

Also here's great recipe for dinner I found through WW and adapted slightly (more cilantro, less onions).

The key here is keeping the portions under control, with the sauce and the cheese in particular. It doesn't seem like enough sauce, but it actually is. Serve with salad for one awesome dinner. 1/6 of a pizza is 10pts, not bad for a satisfying dinner. Also, I love pizza. Leftovers are delicious.

BBQ Chicken Black Bean Pizza:
Pizza dough (storebough or homemade)
1/2 c of bbq sauce
8 oz of chicken breast, cooked, cubed
1 1/2 c cheese (low fat, I used mozzarella)
1/2 small can black beans (7.5 oz)
1/2 small red onion, chopped
1/4 c cilantro chopped

1. Pre-bake your pizza crust. I used a pizza stone.
2. Coat the chicken in 1/4 c of the BBQ sauce
3. Sprinkle pre-baked crust with 3/4 c of cheese
4. Top with chicken, onion, black beans, and cilantro
5. Sprinkle the rest of the cheese
6. Drizzle the pizza with remaining 1/4 c of BBQ sauce

Bake at 450 until cheese is bubbly.

Water! Great tip! I also find that if I don't drink enough when I'm working out and dieting I get MASSIVE headaches.

And HOLY COW - yes, RICE is dreadful. I remember when I was counting calories a few years ago that I was astounded that one tiny serving of rice was 180 calories WITHOUT butter. No wonder it is so many points. Too bad I like rice so much...
