Meatless Monday

I think I've posted about meatless Monday before. We don't do it on Monday exactly, but I'm always trying to brainstorm ideas for meatless meals. Recently a friend of mine emailed me and asked me for meatless meal ideas. So I sent her some. Another friend sent some along too.

So if you want to lower your food budget, improve your health, help the environment, and otherwise just eat better, here are some meatless ideas. We're not vegetarians or vegans here, but we are trying to get a higher concentration of our diet from plants.

If you have great meatless ideas to share, please contribute them in the comments (links to your own blog/recipes would be great!):

General Ideas:
*baked potato & salad
*Carrot Soup
*Mushroom Barley Soup (modify and add more carrots)
*Salads (make them fancy-- and more filling -- with nuts & feta)
*Pizza - easily meatless or add very little meat
*Pasta - various sauces or tossed with just olive oil/garlic salt/vegetables
*Black Bean Soup

Breakfast for dinner is easily meatless:
*Eggs (frittata, omelet, scrambled, fried, whatever)
*Pancakes
*Waffles
*Fruit salad on the side
*Crepes (sweet or savory, try cream cheese with vegetables...that would be amazing!)

Asian
*Stir fry
*Rumbi bowls (found this on pinterest, cut the chicken to make it meatless). Also instead of making the sauce like she does we used "Veri Veri Teriyaki", you can find it at costco or walmart. It is amazing straight out of the jar. Joe says they were better than the ones at the actual rumba restaurant. Score.

I love using spaghetti squash instead of pasta. So easy and so healthy. I use it all the time in place of actual spaghetti.

Jeff just tolerates it cause he is a must-have-meat-man...but I LOVE IT! To eat it with chips is the best:)
